Our Cert IV Commercial Cookery (SIT40521) is government-approved and fully accredited.

Using discretion and judgment, this qualification will enable you to work within supervisory position managing finance, monitoring operations, and menu development for special dietary requirements. This qualification reflects the role of commercial cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items.

Course Structure

The Certificate IV in Kitchen Management (SIT40521) course has 33 total units of competency, including 27 core units and 6 elective units.

This course is offered on a full-time basis;

  • 60 week tuition 
  • 16 week holidays 
  • 76 week total duration

During term students attend scheduled classes for 15 hours per week. Students are required to undertake additional independent study, homework and assessment outside of class time. The approximate hours for this course are:

  • Structured classes: 15 hours / week
  • Independent study: 10 hours / week

This course is only available to students who have completed a certificate III in Commercial Cookery. 

Minimum Age to Apply Applicants must be 18 years of age or older.

A review of each proposed placement business is undertaken prior to entering into a Work Placement Agreement to ensure the organisation can appropriately help the student address the specific course requirements.
